Eggplant, Meatball, & Ricotta
1-12” Crustology® Pizza Crust (any variety)
1/3 C Pizza Sauce
1/2 C shredded Italian Blend Cheese
1/2 C part Skim Ricotta
1/3 C thinly sliced Eggplant
4 thinly sliced Turkey Meatballs
Sauté the eggplant in a pan with light butter until soft. Spread the pizza sauce in an even layer on the crust. Layer with eggplant and meatball slices. Top with ricotta and Italian blend cheese. Cook at 450º for 10-12 minutes. Top with fresh basil, parmesan, and a drizzle of balsamic glaze.
